Alpataco Patagonia Cabernet Sauvignon 2018
Alpataco is an autochthonous shrub that symbolizes the tenacity of life in the Patagonian steppe. The low yields of the vineyard and a vinification with minimal intervention give rise to fresh and elegant wines, which fully express the varietal typicity and the particularity of the terroir.
Alpataco Cabernet Sauvignon has a very intense red color. The nose is very complex, aromas of red berries, pepper and spices are combined. In the mouth it is structured, fresh and fruity, with well-defined characteristics.

VINIFICATION
Three days of cold maceration with carbon dioxide and dry ice pellets, after fermentation, seven days of maceration with a hat submerged at low temperature. Alcoholic fermentation is carried out in stainless steel tanks with selected enzymes and yeasts, for 10 days at a temperature of 27ºC. Malolactic fermentation with seeding of lactic bacteria. 100% in stainless steel tanks.
BREEDING
The entire wine has remained in stainless steel tanks, suspending its fine lees until stabilization and final cutting.
