Technical - pH 3.88; total acidity: 58g/L; residual suger <2.0g/L; alcohol 14.1%
Senior Winemaker Enrique Torres
Enrique is passionate about wine! He currently holds the position of Senior Winemaker at Calipaso Winery and Villa and became a Winemaker at the ripe old age of 25 after working his way up in the Cellar and local Paso Robles Wine Appellation.
His specialty is working with grape varietals which thrive well in Paso Robles and other areas of the Central Coast including but not limited to: Albariño, Chardonnay, Cabernet Sauvignon, Tempranillo. His knowledge base includes all aspects of wine production from Crushing, Fermenting, Blending, Filtering and Bottling, which makes him incredibly versatile and valuable to overall operations at Cali Paso. He knows the correct protocols to follow, is very hands on with quality control, and has developed a discerning wine palette.
