This parcel as a whole is called Rosey but in the 18th century a small parcel called "Sept Ranches" appeared in the southwest corner near Plantenay. Ranche is a form for the word "ronce " from the Latin ‘RUMEX’ which means "small sorrel, a species of stinger plant". Other variants such as "ronche", "ronde" and "ronze" appear in the place-name history of Burgundy.

BREEDING In tuns and in 450 L barrels for ten months and then five months of flavor maturation in stainless steel vats.
VINIFICATION Cold pre-fermentation maceration for ten days with pumping over and punching down under temperature control throughout the fermentation.
