Famiglia Bianchi Mendoza Cabernet Sauvignon 2016
A classic Cabernet Sauvignon that can compete with the best from around the world, this wine displays a deep ruby color and great “legs.” Spicy and complex aromas of black pepper, licorice, toasty coffee grinds and hints of fresh mint mingle with cassis and wild berries. Ample and persistent in the mouth, with a harmonious structure that highlights its personality and pedigree.
The grapes come primarily from the Asti and Doña Elsa Estate, situated in Rama Caída, San Rafael, Mendoza, around 2500 ft. (760 meters) above sea level. It is an ideal climate for the Cabernet Sauvignon grape because of the warm days and cool nights that are typical of the area. The soil is of sandy calcareous composition and alluvial origins. Picked by hand, the grapes went through classic crushing and fermentation, with periodic pump-over and maceration on skins for 21 days. It was aged ten months in 90 percent French, 10 percent American barrels – 33 percent new, 33 percent one-year-old and 33 percent two-years-old. After stabilization, filtering the final wine aged in the bottle an additional ten months prior to release.
Serve at room temperature with red meats, lamb, cheeses.
