Machine harvested, stainless steel cool tank fermentation for three weeks and then left to relax for three weeks. A light racking and then prepped for bottling in August.
A superb example of Marlborough, Sauvignon Blanc. The Awatere Valley is a bit cooler than the rest of Marlborough so less overt tropical fruit and instead a more European note. Tight, elegant and fresh!
White peach, gooseberry, citrus, mineral and sherbet.
Seafood dishes - oysters, crab, clams, lobster and prawns. Thai-style chicken curry or salad. Grilled fish especially squid or swordfish. Dishes with herbs and greens - salmon with dill or recipes containing basil, coriander, rocket and especially mint.
