The incredible 2014 Esencia #4 is a sweet Moscatel de Alejandría bottled with only 4% alcohol and a whopping 476 grams of sugar, a sort of Muscat syrup with a pH of 4.53 and 9.6 grams of acidity (tartaric), incredible parameters even more extreme than the 2011 I tasted last time. The raisins were picked in October, which are further air dried with a fan, and they get so dry that have to be macerated in the must of the #3 before pressing them. It fermented very slowly in a 600-liter demi-muid, and was bottled as soon as fermentation was over...some 40 months later! It has an explosive nose with notes of pollen, Mediterranean herbs, hints of honey, apricots, balsam and pepper, mixing the spicy and sweet characteristics in a truly beautiful way with even a touch of petrol. The palate is also impressive with great depth of flavors, sweet but never cloying, dense, persistent and complex with even some citric echoes. This is super clean and precise, without any traces of botrytis. It has concentration and character keeping the elegance and freshness.
